Gulab Jamun is a classic Indian dessert usually made using khoya or milk powder, then shaped into balls, deep-fried, and soaked in a sugary, cardamom-scented syrup.
Here’s a simple recipe for making Gulab Jamun:
Ingredients
For the Gulab Jamun:
- 1 cup Milk Powder or Khoya
- 2 tablespoons All-purpose Flour (Maida)
- A pinch of Baking Soda
- 2-3 tablespoons Milk
- 1 tablespoon Ghee (Clarified Butter)
- Oil for deep frying
For the Sugar Syrup:
- 2 cups Sugar
- 2 cups Water
- 4 Green Cardamom (Elaichi)
- Few strands of Saffron
Procedure
Prepare the Dough:
- Mix Dry Ingredients: In a bowl, combine the milk powder or khoya, all-purpose flour and baking soda.
- Add Liquids: Add ghee and just enough milk to form a soft, pliable dough.
- Form Balls: Divide the dough into equal portions, and roll these into smooth, crack-free balls.
Prepare the Sugar Syrup:
- Combine Ingredients: In a pan, combine the sugar, water, cardamom, and saffron. Bring it to a boil.
- Simmer: After it starts boiling, reduce the flame and let it simmer until the syrup reaches a slightly thick consistency.
Frying and Soaking:
- Frying: Heat the oil for frying, then deep fry the balls on a low flame until they turn golden brown.
- Soaking: Immerse the piping hot, fried gulab jamuns in the sugar syrup. Soak them until they become soft, spongy and well infused with the syrup.
Allow your Gulab Jamun to cool before serving. They can be served cold or warm according to preferences.
